Description

Ingredients

4 cod fillets

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

0.5 teaspoon salt

0.25 teaspoon black pepper

1 large egg

Olive oil spray

Lemon wedges for serving


Instructions

1. Preheat your oven to 425°F and line a baking sheet with parchment paper. Pat cod fillets dry with paper towels.

2. In a shallow bowl, mix together Parmesan, panko, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg.

3. Dip each cod fillet into the egg, then coat thoroughly in the Parmesan mixture, pressing it on to stick well.

4. Arrange the coated fillets on the prepared baking sheet. Lightly spray the tops with olive oil spray.

5. Bake for 15 to 18 minutes, or until golden brown and the fish flakes easily with a fork.
