Ingredients
2 medium sweet potatoes

⅓ cup freshly grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Peel the sweet potatoes and cut them into uniform sticks.
2. In a bowl, toss the sweet potato sticks with cornstarch until just coated.
