Ingredients
1 cup unsalted butter
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 ½ teaspoons peppermint extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¾ cup crushed candy canes
Instructions
1. In a large bowl, cream together the butter and sugar until light and fluffy.
2. Beat in the egg, vanilla extract, and peppermint extract until combined.
3. In a separate bowl, whisk together the flour, baking powder, and salt.
4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
5. Fold in the crushed candy canes evenly.
6. Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet.
7. Bake at 350°F for 9 to 11 minutes, until the edges are just golden.
8. Let cool for 5 minutes on the pan before transferring to a wire rack to cool completely.
Notes
Use peppermint extract sparingly—it’s strong!
Crushed candy canes melt slightly while baking, adding bursts of peppermint flavor.
Don’t overbake—these cookies are best when soft in the center.
