Ingredients

1.5 pounds boneless skinless chicken thighs

2 cups pineapple chunks

1 red bell pepper

1 green bell pepper

1 red onion

1 cup teriyaki sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ground black pepper


Instructions

1. In a large bowl, combine teriyaki sauce, olive oil, garlic powder, and ground black pepper. Stir well to create the marinade.

2. Cut chicken thighs into 1.5-inch chunks and add to the marinade. Mix until fully coated.

3. Cover and refrigerate the chicken for at least 30 minutes or up to 4 hours for best flavor.

4. Soak wooden skewers in water while the chicken marinates to prevent burning.

5. Chop the bell peppers and red onion into large, skewer-sized pieces.

6. Assemble the kabobs by threading chicken, pineapple, and vegetables alternately onto the skewers.

7. Preheat grill to medium-high heat.

8. Place kabobs on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

9. Remove from grill and transfer to a serving platter. Garnish with parsley or sesame seeds if desired.
