Ingredients
1 cup butter
1 cup sugar
1 large egg
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 package (3.4 oz) instant pistachio pudding mix
½ cup milk
2 cups powdered sugar
½ cup chopped pistachios
Instructions
1. Cream together softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
2. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients to form dough.
3. Press dough evenly into a parchment-lined baking pan. Bake at 350°F (175°C) for 20-25 minutes. Let cool completely.
4. In a medium bowl, whisk instant pistachio pudding mix and milk until thickened. Beat in softened butter, then gradually add powdered sugar, mixing until smooth and creamy.
5. Spread frosting over cooled cookie base. Sprinkle with chopped pistachios. Cut into squares and serve.
Notes
Bring the butter to room temperature before starting for best texture.
Cool the baked cookie base completely before adding frosting.
