Ingredients
1 cup unsalted butter, softened
0.5 cup powdered sugar
1.5 teaspoons vanilla extract
2.25 cups all-purpose flour
0.25 teaspoon salt
0.75 cup finely chopped unsalted pistachios
1 cup powdered sugar, for rolling
Instructions
1. In a large bowl, cream together the softened butter and 0.5 cup powdered sugar until light and fluffy.
2. Add vanilla extract and mix again until fully incorporated.
3. Gradually add in flour and salt, mixing on low until a soft dough forms.
4. Fold in the finely chopped pistachios with a spatula until evenly distributed.
5. Roll tablespoon-sized portions of dough into balls and place on a parchment-lined baking sheet.
6. Bake at 350°F (175°C) for 12–15 minutes, until set but not browned.
7. Cool for 5 minutes, then roll the warm cookies in powdered sugar.
8. Allow to cool completely on a wire rack, then roll once more in powdered sugar for a snowy finish.
