Ingredients
1 medium Russet potato
6 to 8 cups powdered sugar
1 teaspoon vanilla extract
1 pinch salt
1/2 cup creamy peanut butter
Instructions
1. Peel and cube the potato, then boil until fork-tender.
2. Mash the potato until completely smooth and let it cool to room temperature.
3. In a bowl, mix the mashed potato with powdered sugar one cup at a time until a thick dough forms.
4. Stir in vanilla extract and salt, then knead the dough until smooth and no longer sticky.
5. Roll the dough out on a powdered-sugar-dusted surface into a 1/4 inch thick rectangle.
6. Spread the peanut butter evenly over the surface without tearing the dough.
7. Roll the dough into a tight log and wrap it in plastic wrap.
8. Chill in the refrigerator for at least 1 hour until firm.
9. Slice into 1/4 inch pieces and serve or store.
Notes
Make sure the mashed potato is completely cool before mixing in sugar to prevent melting.
If the dough becomes too sticky, add more powdered sugar a little at a time.
