Description

Ingredients

1 ¾ cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup brown sugar

½ cup pumpkin puree

1 egg yolk

1 teaspoon vanilla extract


Instructions

1. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.

2. In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.

3. Add the pumpkin puree, egg yolk, and vanilla extract to the butter mixture and beat until smooth.

4. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.

5. Chill the dough in the refrigerator for 30 minutes to firm up.

6. Preheat the oven to 350°F and line baking sheets with parchment paper.

7. Scoop dough into tablespoon-sized balls and slightly flatten them.

8. Bake for 10–12 minutes, or until edges are set but centers remain soft.

9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use canned pumpkin puree, not pie filling, for best results.

Chilling the dough helps keep the cookies thick and chewy.

Store in an airtight container to keep the cookies fresh for days.
