Ingredients
1 cup pumpkin puree

1 large egg yolk

2 teaspoons pumpkin pie spice
2 teaspoons espresso powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Instructions
1. In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
2. Add pumpkin puree, egg yolk, and vanilla extract. Mix until smooth and well combined.
3. In a separate bowl, whisk together flour, pumpkin pie spice, espresso powder, baking soda, and salt.
4. Gradually mix dry ingredients into the wet mixture until a soft dough forms. Chill the dough for 30 minutes.
5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
6. Scoop tablespoon-sized dough balls onto the sheet, spacing them 2 inches apart.
7. Bake for 10–12 minutes until edges are just set.
8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
9. Once fully cooled, drizzle with maple glaze if using.
Notes
Use pure pumpkin puree, not pumpkin pie filling.
Chilling the dough is key for chewy texture and preventing spreading.
Glaze after the cookies are completely cool to avoid melting.
