Ingredients
1.5 lbs chicken breasts
1 cup long grain white rice
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 cup water
1 packet onion soup mix
Instructions
1. Preheat oven to 350°F and grease a 9×13 baking dish.
2. In the dish, mix the rice, cream of chicken soup, cream of mushroom soup, and water until well blended.
3. Place chicken breasts on top of the rice mixture.
4. Sprinkle the onion soup mix evenly over the top.
5. Cover tightly with foil and bake for 1 hour and 30 minutes without removing the foil.
6. Check that the rice is tender and chicken is fully cooked. Let rest 5 minutes before serving.
Notes
Let the casserole rest before serving to help thicken.
Do not open the foil while baking to retain steam.
You can swap soups for variations like cream of celery or cheddar.
