Ingredients
1 tablespoon olive oil or butter
1 pound beef stew meat or sirloin steak, cubed
1 small onion, chopped
2 cloves garlic, minced
2 cups mushrooms, sliced
2 cups beef broth
1 tablespoon Worcestershire sauce
2 teaspoons Dijon mustard
3 cups egg noodles
1 cup sour cream
Salt, to taste
Black pepper, to taste
Instructions
1. Set the Instant Pot to sauté mode. Add olive oil or butter and brown the beef on all sides.
2. Add chopped onion and garlic. Cook until softened and fragrant.
3. Stir in mushrooms and cook until they start to release their moisture.
4. Add Worcestershire sauce, Dijon mustard, salt, pepper, and beef broth. Stir to combine.
5. Close the lid and cook on high pressure for 10 minutes. Quick release the pressure.
6. Add egg noodles to the pot, pushing them gently under the liquid.
7. Cook on high pressure for 5 minutes. Quick release again.
8. Stir in sour cream until the sauce is smooth and creamy.

Notes
For a thicker sauce, mix 1 tablespoon cornstarch with cold water and stir in before adding sour cream.
