Description
Raspberry Chocolate Lasagna is a rich no-bake dessert made with a chocolate cookie crust, creamy cheesecake layer, chocolate pudding, whipped topping, and fresh raspberries. This easy layered raspberry chocolate dessert is perfect for holidays, potlucks, summer parties, and make-ahead treats.
Ingredients
24 chocolate sandwich cookies, crushed
6 tablespoons butter, melted
8 ounces cream cheese, softened
1 cup powdered sugar
12 ounces whipped topping, divided
2 boxes instant chocolate pudding mix, 3.9 ounces each
3 cups cold milk
2 cups fresh raspberries, divided
2 tablespoons chocolate shavings, optional for garnish
Instructions
1. Crush the chocolate sandwich cookies into fine crumbs and mix them with the melted butter until evenly combined.
2. Press the cookie mixture firmly into the bottom of a 9ร13-inch dish to form the crust, then chill for 15 minutes.
3. In a large bowl, beat the softened cream cheese until smooth.
4. Add the powdered sugar and beat again until creamy and fully blended.
5. Fold in 1 1/2 cups of whipped topping and 1 cup of raspberries very gently so the mixture stays light and fluffy.
6. Spread the cream cheese layer evenly over the chilled crust.
7. In a separate bowl, whisk together the instant chocolate pudding mix and cold milk for about 2 minutes until thickened.
8. Spread the chocolate pudding evenly over the cream cheese layer.
9. Top with the remaining whipped topping and smooth it into an even layer.
10. Scatter the remaining raspberries over the top and add chocolate shavings if using.
11. Refrigerate for at least 4 hours, or overnight, until fully set.
12. Slice and serve chilled.
Notes
Use softened cream cheese so the filling turns out smooth and creamy without lumps.
Drain raspberries well if using frozen ones so the layers do not become watery.
For the cleanest slices, chill overnight and wipe the knife between cuts.
