Ingredients

2 tablespoons olive oil

1 medium yellow onion, chopped

4 cloves garlic, minced

1 pound ground beef

2 tablespoons tomato paste

1 can (28 ounces) crushed tomatoes

4 cups beef broth

2 teaspoons Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

9 ounces cheese tortellini

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil or parsley, chopped, for garnish


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft.

2. Add minced garlic and sauté for 1 minute until fragrant.

3. Stir in ground beef, cook until browned, then drain excess fat.

4. Mix in tomato paste and let it cook for 1 minute to deepen the flavor.

5. Add crushed tomatoes, beef broth, Italian seasoning, and red pepper flakes if using. Stir well and bring to a simmer for 15 minutes.

6. Add tortellini and cook according to package instructions until tender.

7. Reduce heat, then stir in heavy cream, Parmesan cheese, and half of the mozzarella.

8. Let cheese melt into the soup for a creamy consistency.

9. Serve hot, topped with the remaining mozzarella and fresh basil or parsley.

Use fresh or refrigerated tortellini for best results.
