Ingredients
4 bone-in skin-on chicken thighs
6 garlic cloves minced
1 tablespoon fresh rosemary chopped
1 tablespoon fresh thyme leaves
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon lemon zest optional
Instructions
1. Preheat your oven to 400°F and pat the chicken thighs dry with paper towels. Arrange them in a cast iron skillet or baking dish, skin-side up.
2. In a bowl, mix together the minced garlic, chopped rosemary, thyme, olive oil, salt, pepper, and lemon zest.
3. Rub the garlic herb mixture all over the chicken thighs, making sure to get some under the skin.
4. Roast the chicken for 35–40 minutes, or until the internal temperature reaches 175°F and the skin is golden and crispy.
5. For extra crispiness, broil for 2–3 minutes at the end, watching closely.
6. Remove from the oven and let rest for 5 minutes before serving.
Notes
This recipe works well with boneless thighs but reduce cook time.
Use fresh herbs for best flavor, but dried will do in a pinch.
Lemon zest adds brightness but can be skipped if needed.
