Ingredients

2 medium sweet potatoes

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons honey

1/3 cup crumbled feta cheese

1 teaspoon fresh thyme or rosemary (chopped)


Instructions

1. Preheat your oven to 425°F and line a baking sheet with parchment paper.

2. Wash and dry the sweet potatoes, then slice into 1/4-inch thick rounds.

3. Arrange sweet potato slices in a single layer on the prepared baking sheet.

4. Drizzle both sides of the rounds with olive oil and season with salt and pepper.

5. Roast in the oven for 25 to 30 minutes, flipping halfway, until golden and crisp on the edges.
