Description

Ingredients

2 1/4 teaspoons active dry yeast

1 cup warm milk

1/2 cup warm water

1/4 cup molasses

2 tablespoons brown sugar

1 large egg

1/4 cup unsalted butter, melted

1 cup old-fashioned oats

3 1/2 cups all-purpose flour

1 1/4 teaspoons salt

2 tablespoons melted butter, for brushing


Instructions

1. In a large mixing bowl, stir together the warm milk, warm water, brown sugar, and active dry yeast. Let it sit for 5 to 10 minutes until foamy.

2. Add the molasses, egg, melted butter, salt, and old-fashioned oats. Stir until well combined.

3. Add the flour gradually and mix until a soft dough forms.

4. Knead the dough on a lightly floured surface for 8 to 10 minutes, until smooth and elastic.

5. Place the dough in a greased bowl, cover, and let it rise for 1 to 1 1/2 hours, or until doubled in size.

6. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball.

7. Arrange the dough balls in a greased baking dish or on a lined baking sheet. Cover and let rise again for 30 to 45 minutes, until puffy.

8. Bake in a preheated 375°F oven for 18 to 22 minutes, until golden brown.

9. Brush the warm rolls with melted butter before serving.

Notes

Letting the oats sit briefly in the liquid mixture helps soften them and gives the rolls a more tender texture.

If your kitchen is cool, let the dough rise in a slightly warm spot so the rolls puff up properly.

Brush the tops with melted butter as soon as they come out of the oven for the softest finish and best flavor.
