Ingredients
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups sweet potatoes, peeled and cubed
4 cups vegetable broth
1 cup canned coconut milk
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lime juice
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, cooking until fragrant and translucent, about 5 minutes.
2. Add cubed sweet potatoes to the pot and stir to coat with aromatics.
3. Pour in vegetable broth to cover the sweet potatoes. Bring to a boil, then reduce heat and simmer for 20–25 minutes until tender.
4. Use an immersion blender to puree the soup until smooth, or blend in batches for a silky texture.
5. Stir in coconut milk, cumin, ginger, salt, and pepper. Warm through for 5 minutes.
6. Add lime juice, stir, and serve hot.
Notes
Use orange-fleshed sweet potatoes for a richer flavor and color.
Add more broth if soup is too thick after blending.
