Description

This Saucy Lemon Herb Shrimp with Strawberry-Basil Salsa is the ultimate summer seafood dish. Juicy shrimp tossed in lemon garlic butter, paired with a sweet and fresh strawberry-basil salsa. Ingredients

12 oz shrimp, peeled and deveined

2 tablespoons butter

2 cloves garlic, minced

2 tablespoons lemon juice

1 tablespoon fresh parsley, chopped

1 teaspoon fresh thyme leaves

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup fresh strawberries, chopped

1 tablespoon red onion, finely diced

2 tablespoons fresh basil, sliced

1 teaspoon balsamic glaze


Instructions

1. In a small bowl, combine chopped strawberries, finely diced red onion, and sliced fresh basil. Add a pinch of salt and a light drizzle of balsamic glaze. Toss gently and chill while you prepare the shrimp.

2. In a large skillet over medium heat, melt the butter and add minced garlic. Let it cook for 1-2 minutes until fragrant but not browned.

3. Add the shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque.

4. Squeeze in fresh lemon juice and sprinkle in chopped parsley and thyme. Toss to coat evenly.

5. Arrange the warm shrimp on a platter or plate. Spoon chilled strawberry-basil salsa over the top or serve on the side.

6. Drizzle a little extra balsamic glaze on top if desired, and garnish with more basil.

Notes

This recipe is best served immediately while the shrimp is hot and the salsa is chilled.

You can substitute strawberries with diced mango or peach for a twist.

For extra richness, add a splash of white wine to the sauce during cooking.
