Ingredients

1 tablespoon olive oil

12 ounces sausage (Italian, spicy, or chicken)

2 cloves garlic, minced

1 cup orzo pasta

2 ½ cups chicken broth

2 cups broccoli florets

½ cup grated Parmesan cheese

Salt, to taste

Pepper, to taste


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it into crumbles, until browned and fully cooked.

2. Stir in the minced garlic and cook for about 30 seconds until fragrant. Add the orzo and toast it for 1 minute.

3. Pour in the chicken broth. Bring to a simmer and cook the orzo, stirring occasionally, for about 8–10 minutes until mostly tender.

4. Add the broccoli to the skillet. Cover and steam for 5 minutes until the broccoli is tender and bright green.

5. Stir in Parmesan cheese until melted and the mixture is creamy. Season with salt and pepper to taste.

6. Serve hot directly from the skillet.

Notes

Orzo absorbs liquid quickly, so keep an eye on it and add a splash more broth if needed.

You can use fresh or frozen broccoli—both work great.

If you want a bit of kick, try using spicy sausage or adding a pinch of red pepper flakes.
