Description

These Sausage Pancake Bites are a quick and easy breakfast idea, combining fluffy pancake batter with savory breakfast sausage. Ingredients

1 cup pancake mix

1/2 cup milk

1 egg

1 tablespoon maple syrup

12 cooked breakfast sausage links, cut into halves

Butter or nonstick spray for greasing


Instructions

1. Preheat the oven to 375°F and grease a mini muffin tin with butter or nonstick spray.

2. In a mixing bowl, combine the pancake mix, milk, egg, and maple syrup. Stir until just combined; do not overmix.

3. Place one piece of cooked sausage into each mini muffin cup.

4. Spoon the pancake batter over each sausage, filling each cup about 2/3 full.

5. Bake for 12–15 minutes, or until the tops are golden and a toothpick comes out clean.

6. Let cool slightly before removing from the pan. Serve warm with maple syrup or freeze for later.

Notes

These bites can be frozen after baking and reheated for quick breakfasts.
