Ingredients
1 lb chicken breast, sliced thin
3 bell peppers, assorted colors, sliced
1 red onion, sliced
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1 lime, juiced
8 small flour or corn tortillas
Instructions
1. Preheat your oven to 400°F. Line a large sheet pan with parchment paper or lightly oil it for easy cleanup.
2. Slice the chicken, bell peppers, and red onion into thin, uniform strips.
3. In a large bowl, combine the sliced chicken and vegetables with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Toss until everything is well coated.
4. Spread the mixture in an even layer on the sheet pan.
5. Bake for 20–25 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are slightly charred and tender.
6. Remove from the oven and immediately squeeze fresh lime juice over the hot fajitas.
7. Serve in warm tortillas with your favorite toppings like sour cream, salsa, or guacamole.
Notes
This recipe works with both chicken breasts and thighs — just slice them thinly.
Add a pinch of cayenne pepper if you like more heat.
