Ingredients
6 bone-in skin-on chicken thighs
1/3 cup maple syrup
2 tablespoons Dijon mustard
2 tablespoons soy sauce
3 cloves garlic minced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups chopped vegetables (carrots, red onion, or brussels sprouts)
Instructions
1. Preheat oven to 400°F and line a large sheet pan with parchment paper or foil. Lightly grease it.
2. In a bowl, whisk together maple syrup, Dijon mustard, soy sauce, garlic, olive oil, salt, and pepper.
3. Place chicken thighs skin-side up on the sheet pan and arrange chopped vegetables around them. Spoon half the glaze over the chicken and vegetables.
4. Roast for 30 minutes, remove from oven, spoon remaining glaze over chicken, and roast another 10–15 minutes until fully cooked.
5. For extra crispy skin, broil for 2–3 minutes watching closely.
6. Let the chicken rest for 5 minutes before serving.
