Ingredients
6 cups russet potatoes, peeled and diced
2 cups shredded cheddar cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup unsalted butter, melted
1/2 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Peel and dice the russet potatoes into small cubes. Boil in salted water for 8 to 10 minutes until just tender. Drain and set aside.
2. In a large bowl, mix sour cream, cream of chicken soup, melted butter, shredded cheddar cheese, chopped onion, salt, and black pepper. Stir until fully combined.
3. Fold the drained potatoes gently into the cheesy mixture until well coated.
4. Transfer the mixture into a greased 9×13-inch baking dish. Spread it evenly.
5. Bake uncovered at 350°F (175°C) for 45 minutes until the top is golden and bubbly.
