Description

Simple Roasted Red Potatoes are a crispy, flavorful side dish made with olive oil, garlic, and herbs. These oven roasted red potatoes are golden on the outside, tender on the inside, and incredibly easy to make. Perfect as a quick potato side dish for weeknight dinners, holiday meals, grilled meats, or roasted chicken.


Ingredients

2 pounds red potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme or rosemary

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Wash and dry the red potatoes, then cut them into evenly sized chunks or halves.

3. Place potatoes in a large mixing bowl and drizzle with olive oil.

4. Add garlic powder, dried thyme or rosemary, salt, and black pepper. Toss until all potatoes are evenly coated.

5. Spread the potatoes on the prepared baking sheet in a single layer, making sure they are not crowded.

6. Roast in the oven for 30 to 40 minutes, flipping halfway through cooking, until the potatoes are golden brown and fork tender.

7. Remove from the oven and sprinkle with fresh parsley if desired. Serve immediately.

Notes

Use small baby red potatoes if available for the best texture and easier prep.

Make sure the potatoes are spread out on the pan to ensure crispy edges rather than steaming.

For extra flavor, sprinkle grated parmesan cheese or smoked paprika during the last 5 minutes of roasting.
