Ingredients

3 to 4 pounds beef short ribs

1 large onion, sliced

4 cloves garlic, minced

2 cups beef broth

2 tablespoons tomato paste

1 cup red wine (optional)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil


Instructions

1. Pat the short ribs dry and season with salt and pepper.

2. In a large skillet, heat olive oil over medium-high heat and sear the short ribs until browned on all sides.

3. Transfer the ribs to a slow cooker.

4. Add sliced onion, minced garlic, tomato paste, thyme, rosemary, Worcestershire sauce, beef broth, and wine (if using).

5. Gently mix ingredients in the slow cooker to combine.

6. Cover and cook on low for 8 hours or high for 5-6 hours, until the meat is tender.

7. Optional: Transfer cooking liquid to a saucepan and simmer to reduce for a thicker sauce.

8. Serve ribs hot with mashed potatoes, noodles, or polenta.
