Ingredients
1 lb sausage (smoked, Italian, or turkey)
1 cup dried lentils, rinsed
3 carrots, chopped
2 celery stalks, chopped
1 onion, diced
2 garlic cloves, minced
2 tbsp tomato paste
1 can (14.5 oz) diced tomatoes
6 cups chicken broth
2 bay leaves
1 tsp dried thyme
Salt and pepper, to taste
Instructions
1. Brown the sausage in a skillet until caramelized, then transfer to the slow cooker.
2. Chop the carrots, celery, onion, and garlic.
3. Add all chopped vegetables, rinsed lentils, tomato paste, diced tomatoes, broth, bay leaves, thyme, salt, and pepper to the slow cooker.
4. Stir everything well to combine.
5. Cook on low for 7 to 8 hours or high for 4 to 5 hours until lentils are tender.
6. Remove bay leaves and adjust seasoning to taste.
7. Serve hot with desired toppings or sides.
