Description

These Slow Cooker Sweet and Sour Meatballs are the ultimate easy comfort food. Juicy meatballs simmered in a tangy homemade sweet and sour sauce with pineapple and bell peppers. Perfect for parties, appetizers, or family dinners. A must-try crockpot meatball recipe with bold flavors and simple ingredients.


Ingredients

32 oz fully cooked meatballs

1 can (20 oz) pineapple chunks with juice

1 cup brown sugar

1 cup ketchup

1/3 cup rice vinegar or apple cider vinegar

2 tablespoons soy sauce

1 red bell pepper, sliced

1 green bell pepper, sliced

1 tablespoon cornstarch

2 tablespoons water


Instructions

1. Spray the inside of your slow cooker with nonstick cooking spray or line it for easy cleanup.

2. In a medium bowl, whisk together the pineapple juice (from the can), brown sugar, ketchup, vinegar, and soy sauce until smooth.

3. Add the meatballs, pineapple chunks, and sliced bell peppers to the slow cooker.

4. Pour the sauce mixture over the meatballs and gently stir to combine.

5. Cover and cook on low for 4–5 hours or high for 2–3 hours, until meatballs are heated through and peppers are soft.

6. In the final 30 minutes of cooking, stir together cornstarch and water in a small bowl, then mix it into the slow cooker to thicken the sauce.

7. Once the sauce thickens, give everything a gentle stir. Serve hot over rice or as an appetizer.

Notes

This dish works great with either frozen or homemade meatballs.

You can make it spicier with a dash of sriracha or crushed red pepper flakes.

Double the batch and freeze half for a future quick dinner.
