Ingredients
4 chicken breasts
2 tablespoons olive oil
3 garlic cloves, minced
4 cups fresh spinach
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken until golden on both sides. Remove and set aside.
2. In the same skillet, sauté minced garlic until fragrant. Add sun-dried tomatoes and cook for another minute.
3. Add fresh spinach and stir until wilted. Pour in heavy cream, then stir in Parmesan cheese. Simmer until the sauce slightly thickens.
4. Place seared chicken in a baking dish and spoon the creamy spinach-tomato sauce over each piece.
5. Sprinkle mozzarella cheese over the top of the chicken.
6. Bake at 375°F for 25–30 minutes or until the chicken is cooked through and cheese is golden and bubbly.
7. Let rest for 5 minutes before serving.
Notes
This dish can be made with chicken thighs if preferred.
If the sauce thickens too much when reheating, stir in a splash of milk.
