Ingredients
0.75 cup unsalted butter
1 cup granulated sugar
2 large eggs
1.5 teaspoons vanilla extract
1.5 cups all-purpose flour
1.5 teaspoons baking powder
0.5 teaspoon salt
0.5 cup whole milk
0.75 cup chocolate ganache (or other gooey filling of your choice)
Instructions
1. Prepare your gooey center first by heating heavy cream and pouring it over chopped chocolate. Stir until smooth and refrigerate until scoopable.
2. In a bowl, cream together butter and sugar until fluffy.
3. Beat in eggs one at a time, then add vanilla extract.
4. In a separate bowl, mix together flour, baking powder, and salt.
5. Add dry ingredients to the wet mixture, alternating with milk until fully combined.
6. Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
7. Fill each liner with a small spoonful of batter, then place a scoop of ganache in the center.
8. Top with more batter until ganache is covered.
9. Bake for 15–18 minutes until tops are lightly golden.
10. Let cool slightly before serving to keep the center gooey.
