Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
24 chocolate kisses, unwrapped
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, beat butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy.
3. Add egg and vanilla extract, mixing until fully combined.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add dry ingredients to the wet mixture, mixing just until combined.
6. Roll dough into 1-inch balls and place on the prepared baking sheet about 2 inches apart.
7. Bake for 8–10 minutes, until edges are set but centers are still soft.
8. Remove from oven and immediately press a chocolate kiss into the center of each cookie.
9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use classic creamy peanut butter for best results.
Don’t overbake—the centers should look slightly underdone when you pull them out.
Cookies can be frozen after baking or as dough balls (without the kisses) for later use.
