Ingredients
1 package cornbread mix (or equivalent homemade batter)
1 pound breakfast sausage (pork or turkey)
1 cup sharp cheddar cheese, shredded
2 green onions, sliced
2 large eggs
1 cup milk or buttermilk
4 tablespoons butter, melted
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain and set aside.
2. In a large bowl, prepare the cornbread batter according to package directions. Add 1 egg and some milk or buttermilk to adjust consistency.
3. Pour half of the batter into a buttered baking dish. Top with sausage, shredded cheese, and green onions.
4. Pour the remaining batter over the filling and smooth the top.
5. Bake at 375°F for 25–30 minutes, or until golden and set.
6. Let rest for 5–10 minutes before slicing and serving.
