Ingredients

For the Cornbread Poppers:

1 cup yellow cornmeal

1/2 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

1/4 cup unsalted butter, melted

2 tablespoons honey

1 large egg

1/2 teaspoon vanilla extract

For the Honey Butter Topping:

3 tablespoons unsalted butter, melted

2 tablespoons honey

1 tablespoon brown sugar

Fresh chives, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, melted butter, honey, egg, and vanilla extract until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Spoon batter into the mini muffin tin, filling each cavity about three-quarters full.
  6. Bake for 10-12 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. While the poppers cool, prepare the honey butter topping by mixing melted butter, honey, and brown sugar in a bowl.
  8. Brush the warm cornbread poppers with the honey butter mixture.
  9. Garnish with fresh chopped chives and serve warm.
