Ingredients
2 medium sweet potatoes (roasted and mashed)
0.5 cup granulated sugar
0.5 cup light brown sugar
0.5 cup unsalted butter (melted)
2 large eggs
0.5 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
0.5 teaspoon ground nutmeg
1 9-inch unbaked pie crust
Instructions
1. Preheat oven to 400°F and roast whole sweet potatoes for 45-50 minutes until soft. Let cool, peel, and mash.
2. Lower oven to 350°F. In a large bowl, combine mashed sweet potatoes, granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla, cinnamon, and nutmeg. Mix until smooth.
3. Pour filling into the unbaked pie crust and smooth the top.
4. Bake for 50-60 minutes, or until the center is just set and a knife comes out mostly clean.
5. Allow the pie to cool completely on a wire rack.
6. Refrigerate for at least 2 hours before slicing for the best texture.
