Ingredients
8 oz spaghetti
6 cloves garlic, thinly sliced
1/3 cup extra virgin olive oil
1/2 teaspoon red pepper flakes
1/4 cup chopped fresh parsley
1/4 cup grated parmesan cheese (optional)
Salt to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup of pasta water and drain.
2. Heat olive oil in a large skillet over medium heat. Add sliced garlic and sauté until golden and fragrant.
3. Stir in red pepper flakes and cook for another 30 seconds.
4. Add drained spaghetti to the skillet and toss well to coat in the garlic oil.
5. Add reserved pasta water a bit at a time to loosen the sauce as needed.
6. Stir in chopped parsley and parmesan if using. Adjust salt to taste.
7. Serve immediately, garnished with more parmesan and parsley if desired.
Notes
This dish is best served fresh and hot.
