Ingredients

1 pound rigatoni pasta

2 large chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

2 tablespoons butter

3 cloves garlic, minced

2 cups heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

½ teaspoon salt

½ teaspoon black pepper


Instructions

1. Slice chicken breasts into thin strips and coat with Cajun seasoning. Let rest for 10 minutes.

2. Cook rigatoni pasta in salted water until al dente. Drain and reserve a small amount of pasta water.

3. Heat olive oil in a skillet and sear seasoned chicken for 6–7 minutes until fully cooked. Remove and keep warm.

4. In the same skillet, reduce heat and melt butter. Sauté garlic until fragrant. Add heavy cream and simmer.

5. Stir in mozzarella and Parmesan until the sauce becomes smooth and creamy.

6. Add cooked rigatoni to the sauce and mix well. Return chicken to the skillet and combine.

7. If needed, add a splash of reserved pasta water to loosen the sauce.

8. Serve hot, garnish with Parmesan or extra Cajun seasoning if desired.

Notes

Use freshly grated cheese for best texture and flavor.

Adjust the Cajun seasoning for more or less heat.

Don’t overcook the pasta—al dente is key for the perfect bite.
