Ingredients
1 lb chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
Oil for frying
4 burger buns
1 cup shredded lettuce
12 pickle slices
1/2 cup mayonnaise
1/4 cup sour cream
1 tbsp Dijon mustard
1 tbsp honey
2 tsp hot sauce
1/2 tsp paprika
1 tbsp lemon juice
Instructions
1. Pound chicken breasts to even thickness and marinate in buttermilk, cayenne, salt, and pepper for at least 1 hour.
2. Whisk mayonnaise, sour cream, mustard, honey, hot sauce, lemon juice, and paprika. Chill until ready.
3. Mix flour, cornstarch, paprika, garlic powder, salt, and black pepper. Dredge marinated chicken in this mix, dip again in buttermilk, and redredge for extra crispiness.
4. Heat oil to 350°F. Fry chicken for 4–6 minutes per side until golden and 165°F inside. Drain on wire rack.
5. Toast buns. Spread sauce on both sides. Add lettuce, pickles, and crispy chicken. Serve hot.
