Spicy Garlic Parmesan Chicken Skewers are the ultimate flavor-packed dinner or appetizer. This easy chicken skewer recipe blends garlic, chili, Parmesan, and herbs into juicy, marinated chicken grilled or baked to crispy perfection. Great for BBQs, meal prep, and weeknight meals.
Ingredients
1.5 lbs boneless chicken thighs
3 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon red chili flakes
1 tablespoon hot sauce
0.5 cup grated Parmesan cheese
0.5 teaspoon salt
0.5 teaspoon black pepper
1 teaspoon paprika
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
Instructions
1. In a large mixing bowl, combine olive oil, minced garlic, red chili flakes, hot sauce, paprika, lemon juice, salt, and pepper to form the marinade.
2. Cut the chicken thighs into even bite-sized chunks. Add to the marinade and mix to coat fully. Cover and refrigerate for 30 minutes to 4 hours.
3. Soak wooden skewers if using, then thread marinated chicken onto each skewer with space between pieces.
4. Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and lightly charred. Alternatively, bake at 425°F for 18–20 minutes, then broil 2–3 minutes.
5. While hot, sprinkle with Parmesan and chopped parsley so it melts into the chicken.
Notes
Marinate longer for deeper flavor, up to 4 hours.
You can bake or grill, but broiling adds a charred finish.
Adjust chili flakes or hot sauce to control the heat level.
