Ingredients
4 boneless skinless chicken thighs
1 cup Greek yogurt
3 cloves garlic, minced
1 cup artichoke hearts, chopped
2 cups fresh spinach
1 1/4 cups grated Parmesan cheese
1 1/2 cups heavy cream
1 1/2 cups mushrooms, sliced
1/3 cup fresh basil leaves
3 tablespoons olive oil
3 cups broccoli florets
12 ounces pasta (penne, rigatoni, or fettuccine)
Salt and black pepper to taste
1 teaspoon dried oregano
Instructions
1. Preheat oven to 425°F. Toss broccoli florets with olive oil, salt, pepper, and 1/2 cup Parmesan. Roast for 20–25 minutes until crisp and golden.
2. Heat 1 tablespoon olive oil in a skillet over medium. Season chicken with salt, pepper, and oregano. Cook for 6–7 minutes per side until cooked through. Remove and set aside.
3. In the same skillet, add remaining oil if needed. Sauté garlic for 1 minute, then add cream, Greek yogurt, chopped artichokes, and spinach. Simmer until thickened and spinach is wilted. Stir in 1/2 cup Parmesan and return sliced chicken to the sauce.
4. Sauté mushrooms in olive oil until browned. Add garlic and cook 1 minute more. Blend with basil and 1/4 cup cream until smooth.
5. Boil pasta until al dente, drain, and drizzle with a little olive oil to prevent sticking.
6. Plate pasta with chicken Alfredo on top. Serve broccoli on the side and drizzle with mushroom basil cream. Garnish with remaining Parmesan and fresh basil.
Notes
Let Alfredo simmer slowly to thicken without burning.
For extra crispiness, use a wire rack when roasting broccoli.
Add red pepper flakes if you want a touch of heat.
