Ingredients

1 lb steak (sirloin, ribeye, or flat iron), cubed

8 oz rotini pasta

3 tbsp butter

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated parmesan cheese

Salt and pepper, to taste

2 tbsp chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook rotini according to package directions. Drain and reserve 1/2 cup pasta water.

2. In a large skillet, melt 1 tbsp butter over medium-high heat. Add steak bites in a single layer and sear for 2–3 minutes per side. Remove and set aside.

3. Lower heat to medium, add remaining butter and minced garlic. Cook for 30 seconds until fragrant.

4. Stir in heavy cream and simmer for 3–4 minutes until slightly thickened.

5. Add parmesan cheese and stir until sauce is smooth and fully melted.

6. Return steak and cooked rotini to the skillet. Toss everything together, adding reserved pasta water if needed.

7. Season with salt and pepper to taste. Garnish with chopped parsley. Serve hot.

Notes

Let pasta rest a minute before serving so the sauce thickens slightly.

Don’t overcrowd the pan when searing steak for best browning.

Use freshly grated parmesan for a smooth, non-gritty sauce.
