Ingredients
1 lb steak (sirloin or ribeye), cut into 1-inch cubes
2 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/4 cup grated Parmesan cheese
1 tbsp chopped fresh parsley
Instructions
1. Cut the steak into 1-inch cubes and pat dry with paper towels. Season generously with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat until shimmering.
3. Add the steak in a single layer, working in batches if needed. Sear for 2–3 minutes without moving, then flip and brown all sides. Remove steak and set aside.
4. Reduce heat to medium. Add butter to the skillet and let it melt, then stir in the minced garlic. Cook for 30 seconds until fragrant.
5. Return steak bites to the pan. Toss to coat in the garlic butter.
6. Sprinkle Parmesan cheese over the steak and stir gently to melt and combine.
7. Garnish with chopped parsley and serve hot.
Notes
Use a hot pan and dry steak to get that perfect sear.
Don’t overcrowd the skillet; cook in batches for best browning.
Add a pinch of crushed red pepper for a little heat if desired.
