Ingredients
1 lb ground beef
12 oz rotini pasta (or any short pasta)
1 small onion, diced
2 cloves garlic, minced
1 ½ cups beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 can (14.5 oz) diced tomatoes, drained
1 tsp paprika
½ tsp Italian seasoning
½ tsp salt (or to taste)
¼ tsp black pepper
1 tbsp olive oil
2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring a pot of salted water to a boil and cook the rotini according to package instructions until al dente. Drain and set aside.
- Brown the Ground Beef: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2-3 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant. Add ground beef and cook until browned, breaking it apart. Drain excess grease.
- Add Seasonings and Liquids: Stir in paprika, Italian seasoning, salt, and black pepper. Pour in beef broth, heavy cream, and diced tomatoes. Simmer for 5 minutes to combine flavors.
- Stir in Cheese and Pasta: Lower heat and add shredded cheddar and Parmesan. Stir until melted. Add cooked pasta and toss until coated in sauce.
- Serve and Garnish: Remove from heat and let sit for a couple of minutes to thicken. Garnish with fresh parsley and serve warm.
