Ingredients

1 lb ground beef

12 oz rotini pasta (or any short pasta)

1 small onion, diced

2 cloves garlic, minced

1 ½ cups beef broth

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 can (14.5 oz) diced tomatoes, drained

1 tsp paprika

½ tsp Italian seasoning

½ tsp salt (or to taste)

¼ tsp black pepper

1 tbsp olive oil

2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil and cook the rotini according to package instructions until al dente. Drain and set aside.
  2. Brown the Ground Beef: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2-3 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant. Add ground beef and cook until browned, breaking it apart. Drain excess grease.
  3. Add Seasonings and Liquids: Stir in paprika, Italian seasoning, salt, and black pepper. Pour in beef broth, heavy cream, and diced tomatoes. Simmer for 5 minutes to combine flavors.
  4. Stir in Cheese and Pasta: Lower heat and add shredded cheddar and Parmesan. Stir until melted. Add cooked pasta and toss until coated in sauce.
  5. Serve and Garnish: Remove from heat and let sit for a couple of minutes to thicken. Garnish with fresh parsley and serve warm.
