Ingredients
12 golden sandwich cookies
1 cup freeze-dried strawberries
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
4 tbsp melted butter
Instructions
1. Pulse golden sandwich cookies and freeze-dried strawberries in a food processor until they form coarse crumbs. Set half aside for topping.
2. Mix the remaining crumbs with melted butter. Press into mini cupcake liners or silicone molds. Chill to set.
3. Beat cream cheese until smooth. Add powdered sugar and vanilla, and continue to mix until creamy.
4. In another bowl, whip heavy cream to stiff peaks. Gently fold into the cream cheese mixture.
5. Spoon or pipe the filling onto the crusts. Smooth the tops.
6. Sprinkle the reserved strawberry crunch over each bite.
7. Refrigerate for at least 3 hours until firm.
8. Serve chilled and enjoy!
Notes
Use room temperature cream cheese for a smoother filling.
You can substitute strawberry gelatin powder if you canโt find freeze-dried strawberries.
