Ingredients
1 sheet pie dough (bottom crust)
1 cup fresh strawberries, chopped
1 tablespoon cornstarch
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 cup strawberry jam
1 sheet pie dough (top crust)
1 egg, beaten
1 cup powdered sugar
2 tablespoons heavy cream or milk
2 tablespoons rainbow sprinkles
Instructions
1. Roll out and pre-bake the bottom pie dough in a pie dish at 375°F for 15 minutes with weights, then 5 minutes without.
2. In a saucepan, combine fresh strawberries, sugar, and cornstarch. Cook until thick, then stir in vanilla extract and strawberry jam. Let cool slightly.
3. Pour the filling into the pre-baked crust. Top with second dough, crimp edges, cut slits for steam. Brush with beaten egg.
4. Bake at 375°F for 35–40 minutes until golden brown. Let cool completely.
5. Mix powdered sugar and cream or milk into a glaze. Spread on cooled pie and top with sprinkles.
