Ingredients

1 lb ground beef

1 cup chopped bell peppers (mixed colors)

1 small yellow onion, diced

3 cloves garlic, minced

2 tbsp tomato paste

1 can (14.5 oz) diced tomatoes

4 cups beef broth

1 tsp Italian seasoning

1/2 tsp paprika

3/4 cup orzo pasta

1/2 tsp salt

1/4 tsp black pepper

2 tbsp fresh parsley, chopped


Instructions

1. In a large soup pot, cook the ground beef over medium heat until browned. Drain any excess fat.

2. Add the diced onion and chopped bell peppers. Sauté for about 5 minutes until slightly softened. Stir in the garlic and cook for 1 more minute.

3. Mix in the tomato paste and cook for 2 minutes to develop flavor.

4. Add the diced tomatoes, beef broth, Italian seasoning, and paprika. Bring the mixture to a simmer.

5. Stir in the orzo pasta and reduce heat. Let simmer uncovered for 10 minutes, stirring occasionally, until the orzo is tender.

6. Season the soup with salt and pepper to taste.

7. Garnish with chopped parsley before serving.

Notes

This soup thickens as it sits due to the orzo absorbing liquid.

You can use ground turkey or chicken instead of beef for a lighter version.

For a spicier kick, add red pepper flakes or a dash of hot sauce.
