Ingredients
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
1 pound ground sausage (Italian, turkey, or breakfast)
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon fresh thyme or rosemary (or ½ teaspoon dried)
1 cup shredded cheddar cheese (optional)
Instructions
1. Preheat oven to 400°F. Toss sweet potatoes in olive oil, salt, and pepper. Roast on a baking sheet for 25 minutes until tender and lightly browned.
2. While potatoes roast, cook sausage in a skillet over medium heat until fully browned. Break it up as it cooks, then drain excess fat.
3. In the same skillet, sauté chopped onion until translucent. Add garlic and herbs; cook for 1 more minute.
4. Combine roasted sweet potatoes, cooked sausage, and sautéed aromatics in a mixing bowl or directly in the baking dish. Mix to combine.
5. Transfer the mixture to a greased casserole dish. Sprinkle with shredded cheese if desired.
6. Bake at 375°F uncovered for 15–20 minutes until hot and bubbly. Serve warm.
