Ingredients
2 corn tortillas per pizza
1/3 lb ground beef
1/2 cup refried beans
1 tablespoon taco seasoning
3 tablespoons enchilada or pizza sauce
1/2 cup shredded Mexican blend cheese
1/4 cup diced tomatoes
2 tablespoons neutral oil (for frying)
Instructions
1. Brown the ground beef in a skillet over medium heat until cooked through. Add taco seasoning and a splash of water, simmer until thickened, then set aside.
2. In a separate skillet, heat oil and fry the corn tortillas until golden and crispy. Drain on paper towels.
3. On a baking sheet, layer one crisp tortilla with refried beans and seasoned beef. Top with a second tortilla.
