2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt (for dumplings)

4 tablespoons butter, melted

3/4 cup whole milk

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Heat a large pot over medium heat and melt butter. Add onions, carrots, and celery, cooking until softened, about 5-7 minutes.

2. Pour in chicken broth, season with salt, pepper, and thyme. Simmer for 10 minutes to develop flavor.

3. Stir in cooked shredded chicken and keep simmering gently while making the dumpling dough.

4. In a bowl, whisk together flour, baking powder, salt, melted butter, and milk until just combined into a thick dough.

5. Drop spoonfuls of the dough into the simmering pot. Cover with a lid and steam for 15 minutes. Do not lift the lid during cooking.

6. Once dumplings are fluffy and cooked through, taste and adjust seasoning. Garnish with chopped parsley and serve hot.

Notes

Use rotisserie chicken for a quick shortcut.

Avoid lifting the lid while dumplings cook to ensure fluffiness.
