Ingredients
3 to 4 pounds beef brisket
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons olive oil
1 large yellow onion, chopped
4 garlic cloves, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1/4 cup molasses
1 cup water or beef broth
Instructions
1. Rub brisket with salt, pepper, brown sugar, paprika, garlic powder, and onion powder. Let sit at room temperature for 30 minutes.
2. Heat olive oil in an oven-safe pot or Dutch oven. Sear brisket on all sides until browned. Remove and set aside.
3. In the same pot, cook chopped onion and garlic until softened. Stir in tomato paste, vinegar, Worcestershire, mustard, molasses, and broth. Simmer.
4. Return brisket to pot, spoon sauce over, cover, and bake at 300°F for 3.5 to 4 hours until fork-tender.
5. Remove brisket and rest. Simmer sauce until thickened. Slice brisket against the grain and serve with sauce.

This brisket is even better the next day after the flavors have settled.
