Ingredients
1 pound ground beef 1/2 cup breadcrumbs 1 large egg 3 cloves garlic, minced 1 teaspoon fresh ginger, grated 2 green onions, sliced 2 tablespoons soy sauce 1 teaspoon sesame oil 1 tablespoon brown sugar 2 tablespoons gochujang (Korean chili paste) 1 tablespoon rice vinegar 1 tablespoon honey 1/2 cup mayonnaise 1 tablespoon sriracha or hot sauce salt and pepper, to taste 1 tablespoon vegetable oil
Instructions
1. In a large bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, sesame oil, salt, and pepper. Mix until just combined. Form mixture into 1 to 1.5-inch balls and place on a parchment-lined baking sheet. Bake at 400°F for 18–20 minutes until cooked through. Meanwhile, in a saucepan combine gochujang, soy sauce, brown sugar, rice vinegar, and honey. Simmer 3–5 minutes until slightly thickened. Toss baked meatballs in the glaze to coat evenly. In a bowl, mix mayonnaise with sriracha and a drizzle of sesame oil to make the spicy mayo dip. Serve meatballs garnished with sesame seeds and green onions, alongside spicy mayo. Enjoy hot.
Notes
Do not overwork the meat mixture to keep meatballs tender. Adjust the spice in the mayo dip to taste. Reheat leftovers with a splash of water or glaze to keep moist.
