Ingredients
20 frozen dumplings
1 tablespoon oil
3 cloves garlic, minced

3 tablespoons Thai red curry paste
1 can (13.5 oz) coconut milk
2 tablespoons soy sauce
1 tablespoon brown sugar
1 cup bell peppers, sliced
1 cup carrots, julienned
3 green onions, chopped
1 tablespoon lime juice
2 tablespoons fresh cilantro or Thai basil, chopped (optional)
Instructions
1. Preheat oven to 375°F.
2. In a skillet, heat oil over medium heat. Add garlic and ginger; sauté for 1 minute.
3. Stir in the red curry paste and cook for another minute until aromatic.
4. Pour in the coconut milk, soy sauce, and brown sugar. Stir and bring to a gentle simmer for 5 minutes.
5. Arrange frozen dumplings in a single layer in a baking dish.
6. Scatter bell peppers, carrots, and green onions over the dumplings.
7. Pour the curry sauce evenly over the dish.
8. Cover with foil and bake for 25 minutes.
9. Remove foil and bake uncovered for 10 more minutes until bubbly and slightly golden.
10. Finish with lime juice and a sprinkle of cilantro or Thai basil. Serve warm.
